Tahini Chocolate Chip Cookies….. VEGAN…… these are probably my favourite cookie ever! I LOVE tahini which is a Middle Eastern flavour and one I discovered during my visits to Israel and the Shuk market in Jerusalem where I’d purchase copious amounts of halva. It is believed to have arrived in Israel via ancient Persia and then its popularity spread to other parts of the Middle East. In case you didn’t know, tahini is simply made from roasted sesame seeds which are ground into a paste and have a slight bitter taste which makes them a perfect accompaniment to anything sweet. Unlike food trends to buy locally sourced products, certain foods like tahini are best imported due to the mineral-rich soil in which they are grown. This enhances the flavour of the seeds but the roasting and grinding process adds to the flavour also. It is high in good fats and nutritionally dense; containing vitamin B and E, magnesium, iron and calcium.
