I first made Strawberry Streusel and White Chocolate Muffins in 1999 when I really began to experiment with 'american-style' muffins. However, when I discovered Lucuma powder in 2016, I was inspired to incorporate this delicious caramel/maple flavoured, low-glycemic natural sweetener because of its abundance of health benefits. Lucuma is gluten-free and a source of antioxidants, B vitamins, beta-carotene, iron, zinc, calcium which are necessary for bodily functions and a benefit to the immune system. It comes from the fruit of the Pouteria lucuma tree, which is native to Peru, Chile and Equador. The pulp is dehydrated to produce the beautiful golden powder. We think lucuma is a wonderful addition to these muffins.
