I discovered brownies as a child during my visits to the USA but they were usually made from a box with far too many nasty ingredients. It became my mission to create a brownie that was both fudgey and gooey and would pass my husband's approval. (He is a true brownie connoisseur)! Batches of brownies and several years later, I had success but would the Brits enjoy these as much as my husband? Brownies had not yet crossed the big pond! Whilst living in the Lake District, we had a market stall selling cakes, cookies and traybakes. We were in the process of adopting a baby girl from China and needed to fundraise to help with the costs. My love for baking was a way of making a few extra pounds whilst raising the awareness of the orphan crisis in China. However, not only did our customers learn more about adoption, but they also discovered the brownie and as a result, our 'signature bake', The Gooey Chocolate Brownie was born.
